remembering to drink

I'm on the computer a lot. iIt's really easy to forget about water when i'm working online. I have made this helpful desktop background to keep me remembering to drink.

challenge over!

I finished off my 7 day challenge by losing 2.2 pounds! I was good to my body and it showed. So glad to be moving forward with new and fun things. Trying new things has really motivated me and reminded me that losing weight can be fun. To anyone reading this... i challenge you to do this challenge. Find 7 new things to try in a week. Everyday will be a new experience and another reason to believe that YOU CAN DO THIS.

Day 7

Banana Walnut Pancakes

Delicious! The only word i can use to describe these. It's like a banana nut muffin with syrup poured on it. What a great way to start a day!

Day 6

Baked Apples

I love apples. This recipe was made just for me (and maybe you). The granola on top makes it fabulous. I added a scoop of ice cream on the side. I felt like i was at a restaurant eating apple cobbler. Except less calories and in the privacy of my own home. Loved it!

Chicken Cordon Bleu

This was the most challenging recipe so far. The only problem i had making it was getting the chicken big enough so that it was easy to wrap around the ham and swiss. I think next time if I pound the chicken, it'll be a lot easier. I was really nervous that this wouldn't come out good, but i was wrong. These little suckers were wonderful. My family wished I had made more than I did. I will definitely be making this again soon.

Day 5

Jennie-O Taco Flavored Turkey Tacos

My aunt told me about this and suggested i try it. As another way to try things avoiding red meat, it was a perfect idea. The taco flavoring is great. The meat tasted just like regular taco meat. I was very happily surprised. I did not take a picture of the tacos, but here is a picture of the packaging.

Day 4

Western Omelet Potato Skins

 These are AMAZING! I love baked potatoes and I love eggs. This is like eating a breakfast burrito without the tortilla. I am unfortunately quite boring when it comes to veggies. I wish I wasn't scared to try more varieties of vegetables. So I did not include the onion or peppers. I replaced the ham with turkey bacon and turkey sausage.Yes. I know you love my plate. Hee Hee.

Day 3

Baked Bananas

I was VERY excited to make this. Very simple, yet amazing recipe. I get bored eating bananas plain. This has brought new life to bananas. I ate my baked bananas with breyers smooth and dreamy vanilla ice cream.

Banana Cream Pie

I also made an incredible banana cream pie. Everyone loved it. It tastes so sinful, yet i know i'm not doing a bad thing when i eat a slice. I really recommend this pie for a quick easy dessert.

Day 2

Turkey Bacon

This isn't a recipe, but it was a new thing that i tried.
I am trying my best to steer away from red meat, so I thought I'd give this a try. I know it has the same caloric value as regular bacon, but i just wanted to give it a shot. I loved it!

Day 1

Buffalo Chicken Lasagna

I was a bit skeptical before i made this. buffalo chicken AND lasagna? In one? But i  went for it. Not only did it look delicious, but it smelled and tasted amazing. If you love hot wings and want to enjoy them with low points, this is awesome. The fact that it's in lasagna form makes it so much more filling.

This is the only recipe that i found on the weight watchers site.
p.s. My picture may look a little messy and unappetizing, but i swear it is delicious. Haha. 



here is the recipe:

Ingredients
12 Whole Wheat Lasagna Noodles, uncooked
1 lb. skinless chicken breast, cooked and cubed
3 cups spaghetti sauce (cheese blends are best)
1 cup Texas Pete Buffalo-style Wing Sauce
1 ½ cups water
15 oz. nonfat ricotta cheese
½ cup egg substitute
½ cup blue cheese crumbles or pepper jack cheese


Preheat oven to 350 degrees and lightly spray a 9x13 baking dish with nonstick cooking spray. In a small mixing bowl, combine ricotta cheese and egg substitute and set aside. In a different mixing bowl, combine water, spaghetti sauce, wing sauce and chicken. Spread approximately one cup of the sauce and chicken mixture across the bottom of the pan, and arrange four of the noodle over the sauce. Spread a layer of sauce over the noodles, and then spread a layer of the ricotta mixture over the sace. Add another layer of noodles and repeat the process until you end with a layer of just the sauce and chicken mixture. Cover with aluminum foil and bake for 60 minutes. Remove dish from the oven, sprinkle blue cheese crumbles evenly over the top. Place back in the oven uncovered and bake for an additional 15 minutes. Makes 9 servings!

7 Day Challenge

On 9/28/10 i started a 7 day challenge. I was inspired to do this when i found skinnytaste.com. A blog made by a wonderful person named Gina. I have never been one to cook, but this totally inspired me. Enjoy my challenge. I hope i inspire someone else to try new things. It was really fun.
